This garden fresh easy pico de gallo recipe is a Mexican classic anyone can enjoy. Mexican food is a hit for us because with our 3 kids 5 and under its really the only go out to lunch or dinner option because it’s fast, kid friendly, and affordable! We live in RVA and our favorite restaurant is Pepe’s! We love to have our own Mexican favorites to make at home though, like this easy Pico de Gallo recipe. Add it to your grocery list for your at home Taco Tuesday dinner, a easy appetizer for family or friends, or your next appetizer to take to a get together or pot luck.
- 2 medium yellow onions
- 1 large red onion
- 12 Roma tomatoes
- 2 cups of fresh cilantro
- 1-2 jalapenos
- 1 lime
- Sprinkle of salt
I love that this is a recipe that my kids can help with as well. Getting them involved in the kitchen is fun and a great bonding activity for us!
- Slice the jalapenos in half and scoop out the seeds. Dice the jalapenos finely to distribute throughout the entire dish.
- Dice the onions and tomatoes into square chunks.
- Chop the cilantro.
- Mix all into a large bowl.
- Squeeze the lime over the vegetables.
- Sprinkle a tiny amount of salt.
- Stir together.
- Serve fresh!
