Seasonal Roots Box: Sweet Potato Muffins


My family eats an INSANE amount of fruit and vegetables. We are constantly out of fresh food and running to grab more, which is an awesome “problem” to have.  What is most frustrating is grabbing things from the store that go bad the next day sometimes or get home and are rotten and I have to toss. While I would love to say I can go to various farmers markets throughout the week and snag that fresh and local produce its just not realistic for my family and the stage of life I am in right now.  Lucky for us Seasonal Roots is able to do that for me by connecting families with local produce from farmers that are helping sustain our farms in beautiful Virginia and delivering to my DOOR!

Our first Seasonal Roots box came PACKED with beautiful and delicious goodies.  I want to share a out of this world delicious recipe using the sweet potatoes from Flores Farms.


Sweet Potato Muffins


  • 2 Sweet Potatoes
  • ¼ Cup of chocolate morsels
  • 1 tsp Cinnamon
  • 1 tsp vanilla extract
  • 1 tsp nutmeg
  • 2 cups of flour
  • 1 ½ cup of Brown Sugar
  • 2 Eggs
  • ½ Cup of Vegetable Oil

Prep work needed: Cook the sweet potatoes in the oven for an hour wrapped in Reynolds Wrap!  Once they are mushy all the way through they are ready to cook.  The time may vary on cooking, mine were very large!


  1. Preheat oven to 350 degrees.
  2. Mix the dry ingredients together.
  3. Mix the wet ingredients together and then fold into the dry.
  4. Cook for 25 minutes or until a toothpick is clean after inserting in middle of muffin.


*I recently was recommended these silicone muffin cups from Amazon by a friend and I am in love!  They are so much easier to store in a drawer or cupboard and don’t get gross and yucky after a few uses like the traditional tin.  Completely worth the cost and come in fun colors.

These muffins are great for on the go mornings at the bus stop, on drive to work, with a book and a cup of coffee to relax or for a sweet treat!

    P loves fruits and veggies so he was pumped!! I love adding the choc chips to make it a little sweeter, but they arent necessary! I just cant deny chocolate 🙂
