Crock Pot Chicken Tortilla Soup

I love Panera – endless bread, sweets, and the best soup ever? Need I say more?  Their Southwest Chicken Soup is LEGIT.  We’ve been sick and hanging out at home more so I decided to make my own version with what we had on hand. It was delicious!

Ingredients:

  • 3 boneless chicken breasts
  • 1/2 can of black beans
  • 1/2 can of corn
  • 1 tsp of cumin
  • 1 tsp oregano
  • 1/2 of a carrot, sliced
  • 1 container of organic chicken broth
  • 1/2 of an onion
  • Tortilla chips
  • 1 cup of water

Directions:

  1. Add items in the crock pot on low for 6 hours.

We didn’t have any tortillas available that day. So, I improvised and used Yellow Organic tortilla chips from Aldi and broke apart and added into the soup!  Added a few on the outside and voila it was a delicious at home version of my fave Panera soup on the days where pajamas and snuggles are calling my name!

An alternate idea is to skip the tortilla chips and add a Grilled  Cheese on side (another one of my Panera faves)!
