I dip, you dip, we dip

I am about to BLOW your mind with a delicious dip that you will be taking to every social function for the foreseeable future. But before I do, if the title of this post did not make you think of this song then we are no longer friends.  Go ahead and watch this video and jam out for a moment and remember how much you loved this song.  Don’t even pretend you didn’t.  Its a classic.

I had every attention of posting this recipe yesterday, but apparently theres a new fraternity residing in my home. Lets call this frat Palma Kappa Gray (PKG for short). They must have had their initiation because no one was wearing pants or diapers/undies, they were yelling incoherent chants, followed by laughing and hugging one moment and then punching each other the next.  Chairs and furniture were getting knocked over and there were foul smells on the carpet. I was stepping in liquid that I was not sure what it was.   The farting noises and burping sounds were quite entertaining (to each other) and they were so milk drunk they were teetering on the edge of delirium.  My blinds are off kilter and every surface is sticky.  NOT KIDDING ONE BIT.  This frat will be kicked off campus by next week due to their poor behavior.

If you are also the den mother to a unruly fraternity go make this amazing dip and hide in a closet to eat.  If you are headed to a cookout or gathering and want to take something along add this to your new go to! Its so simple and perfect for warm weather gatherings. Guaranteed not to have any left to take home!

  • 1 can of corn
  • 1 can of black beans, rinsed
  • 5 tablespoons of lime juice
  • 1 tomato diced
  • 1/2 of a red onion, diced
  • 1 avocado, diced
  • 1/3 cup of olive oil
  • Cilantro

When your a cooking nerd and you get excited your knife somewhat matches your onion.

  1. Add corn and black beans into large bowl.

Love colorful food. The more rainbow-ish the better.Dice tomato and onion, adding in next.

2. Dice tomatoes and onions and toss in next!

3. Top with avocado.

Avocados are a part of almost every meal I eat. CANT. GET. ENOUGH.

4. Lime juice and olive oil and then stir items really well to ensure the liquid is evenly spread throughout.

5. Cilantro on top!

Cover and throw in fridge until its time to go!  If you are running late throw it together and jump in the car or open the front door for guests to arrive.  It is seriously that easy.  It is cool and refreshing after being out in the sun and its a no fuss addition to any summer time hang out, small or big.

Final product.
