I hate wasting food, especially healthy food. It’s one of my biggest pet peeves and I will admit we used to do it weekly before we had kids. We would have meals planned and get lazy and end up at the local Mexican restaurant claiming we’d try again the following week and “do better.” Maybe it’s the social worker and mom in me but I hate knowing that there are kids who do not know where there next meal is coming from and don’t have access to fresh vegetables like my kids do.
I put baby Grayson down for his morning nap (teething stinks by the way) and Palmer asked me “What are we cooking today mom? Some muffins?” I really hadn’t planned on baking during nap time but he really enjoys it as a one to one activity so I opened up the fridge and that bag of carrots was staring me in the face. We buy carrots every week and the whole bag rarely gets eaten. I decided we’d find a Pinterest recipe for carrots and tweak to make it our own! So we did and lawd have mercy they were delicious. Poor Grayson might not even get a chance to taste by the time he gets up from his nap.
I asked Palmer what we should call our new muffin creation and he very calmly responded “oh mom, Peter Rabbit Muffins because rabbits love carrots.” Touche kiddo, so here you go. I hope you enjoy them as much as we did!
- 1 cup of unsweetened applesauce
- 1/2 cup of cocoa powder
- 1 cup of grated carrots
- 1 tbsp of cinnamon
- 1/2 tsp of baking powder
- 1 tbsp of vanilla extract
- 1 cup whole wheat flour
- 1 egg
- 1/2 cup of honey
- Preheat oven to 350 degrees.
- Mix all of the dry ingredients together.
- Add in egg, applesauce, and vanilla extract stirring until blended smoothly.
- Bake for 19 minutes in muffin tins. (Use toothpick trick but 19 minutes was the perfect time for ours)!
- Eat warm! Trust me.
Easy peasy rainy activity that will produce a yummy treat perfect for snuggles! Or if you have a veggie hating kid or spouse don’t tell them about carrots and wait for them to eat before you spill the beans.
