Food is such a wonderful way to bring family and friends together and I am always a fan of brunch since that implies mimosas will be served. Going to Grandma’s house has always meant snacks, treats, and eating homemade food. There’s a comfort in knowing she’ll always be there with open arms and ready to whip up something tasty. Today we started our day with a brunch at Grandma’s complete with quality time, front porch swinging and yummy food! Opening up the front doors and llettingthr kids run in the sun while catching up with loved ones makes my soul happy. I made an easy recipe that was a big hit so I wanted to share with my peeps!(Get it?! Peeps and its Easter? I AM HILARIOUS!!!!!)
Easter Egg Casserole:
- 8 eggs
- 2 cups of shredded cheddar cheese
- Dash of pepper
- 1 potato, diced
- 1/2 red pepper, diced
- 1/2 onion, diced
- 1/2 lb of Italian sausage
- Preheat oven to 375 degrees.
- Cook sausage in pan on stove top and add in onion to brown.
- Mix cheese, potato, eggs and pepper.
- Use nonstick spray to grease baking dish.
- Combine all items into baking dish and cook for 20 minutes.
This is the easy part. Wrangling your kids into their smocked outfits and attempting to get a decent picture of my children was a hostage negotiation. We ended up abandoning that mission because we were already 30 minutes late. I was sweating and hadnt even worked out yet. Good gracious, I earned that mimosa!
