Wednesdays are my fave & not just because I am home with the boys and because it’s hump day. I feel like I get more done during my one full weekday off than I do in the other 6 days combined.
Today I was home from working out by 630 am and had whipped up some amazingly healthy banana bread, finished some painting in our kitchen and cleaned before my kiddos woke up. I love the silence of a sleeping house – I can think and reflect and plan. Oh the silence is precious and sacred for me (Probably because it’s never silent here. Ever).
This tasty banana bread is sugar free which I love! We incorporated a favorite book called Ten Little Monkeys while we ate and talked about how monkeys love bananas and then practiced our monkey sounds and swinging. Who said breakfast has to be boring and serious? Not at our table!
- 1 tsp Cinnamon
- 4 ripe bananas
- 3 eggs
- 1 tsp Baking powder
- 1/2 cup of Steel cut oats
- 1 tsp Vanilla
- 1/4 cup Honey
- Preheat oven to 350 degrees.
- Grease baking loaf pan.
- Mash bananas (if your little one is awake let them help! Messy and fun!)
- Combine all ingredients in bowl.
- Cook for 45 minutes!
Moist and yummy and will make your little monkeys full, happy and ready for fun!
