Crock Pot Fajitas


TGIFF – Thank goodness it’s fajita Friday! We survived another week of adult-ing and parenthood of 2!  I was thinking back on how excitement over Fridays has changed just a little in the last 10 years.  In my college days, Fridays meant no classes and planning what I was going to wear to that night’s theme party with my sorority sisters.  If you think that sounds wild and crazy just wait until you hear about tonight.  It started off by doing some serious yard work until 8ish. WHAT?! Yard work, I know contain your jealousy!

But, the real party started while I was showering. My toddler was supposed to be playing nicely while my husband watched him.   I was enjoying the silence and thinking about how yummy the fajitas would taste and then I hear giggling. If you don’t know this yet silence followed by a giggling toddler is code for disaster.  So, I pull back the curtain to see my entire roll of toilet paper strung across the floor and hanging out of the toilet. THE ENTIRE ROLL.  I asked my toddler where his daddy was and he exclaimed “Noooooo” and ran away.  That is when I noticed my wedding ring (which I had placed in the very back of the counter top) was hanging on a dinosaurs tail and I found my hairbrush in the trash can.  I should also clarify that my shower lasted about 180 seconds.  You would have thought I must have been in there for hours for all of this to happen. Nope.

Would I change a thing? Never.  I was just happy that my wedding ring didn’t end up in the toilet! Its the little things that make me thankful these days.  So, to celebrate another week of surviving parenthood and adult-ing we made our crock pot recipe.

  • 3 boneless chicken breasts
  • 1 onion, chopped
  • 1 green pepper
  • 2 cloves of minced garlic
  • 1 tsp. of fresh cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 10 oz can of diced tomatoes

Optional : Lettuce wraps

Add all of the above into your crock pot  and cook on high for 4 hours. Use lettuce wraps instead of a wheat wrap for a even healthier alternative! Another home run coming at ya! Cant wait to hear what you all think.  Have a great weekend everyone, stay cool!
